Super simple and comforting baked goat cheese appetizer with tomatoes, garlic and herbs. Toss any leftovers with pasta the next day for dinner.
This is one of my favorite appetizers in the colder months, it’s so easy and so good. Simply top a log of goat cheese with diced tomatoes and some seasonings and bake.
I love goat cheese and it can be served warm or cold. When it’s baked, it’s tangy creaminess is complimented by the herby tomato sauce and is perfect to spread on baguette slices or crostini.
Most of the ingredients you probably have in the pantry; a can of diced tomatoes, garlic, a few dried herbs. That leaves picking up a log of plain goat cheese at the store and a baguette. That’s it, folks.
How to make this easy baked goat cheese appetizer
Just mix the tomatoes, garlic and herbs and pour over a log of plain goat cheese. Bake in the oven for about 20 minutes and then serve with baguette slices or crostini. A warm and cozy appetizer in minutes.
What about leftovers?
Glad you asked. Any leftovers are great tossed with hot pasta the next day. I like orecchiette or other small shaped pasta, just cook the pasta and save some of the pasta cooking water before draining. Toss the leftover goat cheese and tomato mixture with the hot pasta, add cooking water as needed to loosen it up and keep it all creamy. A little crushed red pepper is an excellent addition along with a good grind of fresh black pepper.
I served this over the holidays to keep everyone happy until dinner. My middle daughter calls this manicotti dip. I see the similarity in taste, although this is definitely tangier. Baked Goat Cheese Appetizer
- 1 (15-ounce) can diced tomatoes with seasoning like garlic and basil
- 1 clove garlic, minced
- 1 tablespoon olive oil
- ½ teaspoon basil
- ½ teaspoon parsley
- ¼ teaspoon oregano
- 1 log plain goat cheese any size, I used a 10-ounce log
- Preheat oven to 350º. In small bowl, mix diced tomatoes, garlic, olive oil and herbs. Add a pinch of salt and pepper to taste.
- Place goat cheese log in middle of small baking dish and pour tomato mixture over and around the cheese log. Bake 20 minutes. Serve with warm baguette slices or crostini. Enjoy.
- Goat cheese logs (cylinder shape) come in various sizes, mine was large because Costco. Any size will work, aim for 6-8 ounces.
