Old-Fashioned Oatmeal Cookies
Old-fashioned oatmeal cookies, slightly crispy and chewy and just like grandma baked.

- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup butter room temperature ~ very soft
- ½ cup light brown sugar
- ½ cup sugar
- 1 egg
- 1 teaspoon vanilla
- 1 cup oats (I used old fashioned oats not instant or quick cooking recipe did not specify type of oat)
Preheat oven to 350º
In bowl, whisk first 4 dry ingredients to combine. Set aside.
In bowl of stand mixer fitted with paddle attachment, or with a handheld mixer, cream butter, sugars, egg and vanilla until well mixed and fluffy. Add dry ingredients, a little at a time and combine well. Add the oats and mix just until combined.
Drop by rounded tablespoons onto ungreased cookie sheet. Bake 12 to 14 minutes until lightly browned. Let cool 1 minute and then remove to wire rack to cool completely. But, by all means, eat a few warm ones! Enjoy.
Tasty variation: Try pressing a pecan half in the middle of each cookie before baking.
