Ingredients

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter room temperature ~ very soft
  • ½ cup light brown sugar
  • ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup oats (I used old fashioned oats not instant or quick cooking recipe did not specify type of oat)

Instructions

  • Preheat oven to 350º
  • In bowl, whisk first 4 dry ingredients to combine. Set aside.
  • In bowl of stand mixer fitted with paddle attachment, or with a handheld mixer, cream butter, sugars, egg and vanilla until well mixed and fluffy. Add dry ingredients, a little at a time and combine well. Add the oats and mix just until combined.
  • Drop by rounded tablespoons onto ungreased cookie sheet. Bake 12 to 14 minutes until lightly browned. Let cool 1 minute and then remove to wire rack to cool completely. But, by all means, eat a few warm ones! Enjoy.

Notes

Tasty variation: Try pressing a pecan half in the middle of each cookie before baking.
Makes 2 dozen cookies.
