Baked Goat Cheese Appetizer

Simple and comforting baked goat cheese appetizer with tomatoes, garlic and herbs. Toss any leftovers with pasta the next day for dinner.

Ingredients

  • 1 (15-ounce) can diced tomatoes with seasoning like garlic and basil
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon basil
  • ½ teaspoon parsley
  • ¼ teaspoon oregano
  • 1 log plain goat cheese any size, I used a 10-ounce log

Instructions

  • Preheat oven to 350º. In small bowl, mix diced tomatoes, garlic, olive oil and herbs. Add a pinch of salt and pepper to taste.
  • Place goat cheese log in middle of small baking dish and pour tomato mixture over and around the cheese log. Bake 20 minutes. Serve with warm baguette slices or crostini. Enjoy.

Notes

  • Goat cheese logs (cylinder shape) come in various sizes, mine was large because Costco. Any size will work, aim for 6-8 ounces.
  • Any leftovers are great with pasta for dinner the next day. Cook pasta and save some cooking water before draining. Toss hot pasta with goat cheese and tomato mixture, adding pasta cooking water as needed to loosen and keep it creamy.
