Ingredients
2(14.5 oz)cans whole green beans
2cupswater
1clovegarlic, minced
2tablespoonsfinely chopped sweet onion
1tablespoonbutter
2slicesthick cut bacon, cut in half cross-wise
¼teaspoonKosher salt
¼teaspoonblack pepper
⅛teaspooncrushed red pepper, or to taste
Instructions
Dump green beans into medium pot and add all of the remaining ingredients.
Bring to a boil and then turn down to low and cook, uncovered, at a steady simmer for 4 to 6 hours. Add water as needed as it reduces to keep green beans from burning. Stir gently when adding water.
After 4 to 6 hours, if needed, break up bacon into pieces/shreds. Taste for salt and pepper. Serve immediately or hold on the stove for later.
Notes
Thick cut bacon is best and as it cooks down for several hours, it will naturally shred into pieces.
You can make a bigger batchif you like, adding another can or two of green beans. Add another cup of water to start, and a little more of the other seasonings (although you shouldn't have to double everything).
Stir occasionally and gently because you don't want to break up the beans which are already tender. Just let them cook down and shrivel and stir gently when adding more water.
